Color: Candied chestnut.
Nose: Fig Newton, smoked mackerel, well-matured rum, lardons, caked salt, German Rauchbier.
Palate: Meaty fond at the bottom of the pan, plum pudding, hoisin sauce, Cherrywood barbeque, flowerbed after a heavy rain, leather book.
Finish: Sweet, smoky, layered, long.
