“Puntas” is a reference to the heads of the spirits run — when the distillate coming off the still is at its highest percentage of alcohol. That abv will continue to drop through the hearts and the tails. Occasionally producers like Tio Tello will set aside a cut higher in the run to create a higher proof mezcal expression, which is often referred to in Oaxaca as a mezcal “con puntas”. This expression was created by using a 280 liter portion of a 650 liter batch of Espadin agave distillate.
