From the Brand: Chattanooga Whiskey announced the newest release in their Barrel Finishing Series: Michigan Maple Syrup Cask Finished. This marks the seventh release in their limited Finishing  Series, which celebrates the union of Tennessee High Malt with a variety of finishing casks. 

For their seventh finish, Chattanooga Whiskey distillers turned to America’s Upper Midwest – this time selecting late harvest maple syrup casks from Michigan. While less widely known, Michigan maple syrup is prized by enthusiasts for its small batch, kettle-cooked complexity – especially in the final draws of the season.  Exclusively filled with old growth, late harvest syrup, these finishing casks bring layered notes of maple candy,  toasted grain, and soft oak, adding a warm richness to the whiskey’s profile. 

“Since launching our Finishing Series in 2021, our aim has been simple: elevate both the whiskey and the finishing cask. To do that, we get precise. Instead of relying on a single mash bill, we blend mash bills to match the finishing cask’s character. And instead of sourcing finishing barrels broadly, we select barrels from specific  regions – each with its own terroir.”

To highlight the finishing barrels, the distilling team blended two complementary bourbon mash bills – one being  a four-grain, three-malt recipe with two types of “aromatic” malt. Slow-toasted for deeper aroma, these specialty  malts add maple-like notes that complement the character of the maple-syrup casks. 

“For this cask finish, we drew from two complementary mash bills. Our signature Barrel 91 recipe contributes  layered complexity from caramel and honey malts, along with rich toasted-barrel character. Meanwhile, Barrel 76  delivers a warm, maple-like depth from its long-toasted aromatic malts, mirroring the flavors of boiled maple syrup.  Together, these profiles amplify the finishing cask’s character – enhancing its flavor without overshadowing it.”

Aged for over four years, including one year in the finishing casks, the whiskey was bottled at 95 proof – offering  notes of pancakes, sweet potato, maple candy, and malted milk ball..
