COVALLE - TOMATO WATER GIN
An exciting new release from the creative team that is William Schragis (formerly of Barrell Craft Spirits fame) and Project Optimist. Covalle is made by pulverizing fresh tomato leaves and stems into an apple-cucumber pulp. That fragrant pulp is clarified and filtered using a centrifuge (among other things), and then blended back into a London dry base. The result is a spirit that captures the bright, green, herbaceous nature of a tomato plant at its most vibrant.
