The Octave Project (a 3-part bottling series), a collaboration between the Independent Spirits filmmaking team and Sacks Dynamic Operations.
From the Brand: The whisky for this project was specially selected by the Independent Spirits team as an ideal representation of the experimental and exploratory nature of independent bottlers. From the private cask collection of SDO Imports, a stellar bourbon barrel-aged Craigellachie served as the starting point for what SDO owner Howard Sacks refers to as “the small barrel project.” The next step involved sourcing unique ex-bourbon and ex-rye octaves to experiment with flavor profiles and maturation. From the ‘mother cask,’ one-third of the liquid was transferred to an ex-bourbon octave, with the remaining one-third added to an ex-rye octave. After maturing for less than six months in the octaves, Howard tasted samples straight from the cask during his last trip to Scotland and knew the time was right for bottling. The samples were shared with Greg Swartz and Trevor Jones of Blacksmith + Jones, who quickly got on board with project to highlight the impacts of cask maturation on the same liquid. The team unanimously agreed to bottle at cask strength, as the whisky was intended to be enjoyed straight from the cask with no dilution.
