When the initial iteration of the Leopold Bros Aperitivo launched back in 2015, it was the first American expression of its kind since Prohibition. Since that day, numerous distillers have followed suit and the category has exploded, but our Aperitivo Classico has remained true to its natural origins. Colored with cochineal—an insect used for hundreds of years in everything from clothing, to textiles, to cordials—our Aperitivo also marked the first naturally-colored expression of its time, as many Italian counterparts switched over to petrolium-based red dyes in the early 2000s. Cochineal coloring existed long before manmade chemical substitutes and was even used to color the redcoats of British soldiers as far back as the 1700s. The Aperitivo Classico begins with two individual distillations of grapefruit peel and coriander, which are then blended together. Water is added at that point to ensure that the cochineal coloring remains vibrant during the steeping. From there, we steep petite wormwood, genepi, and gentian root with the spirit and a small amount of liquified cane sugar is added before bottling. Use the Leopold Bros Aperitivo Classico in any number of Italian cocktails from a simple spritz to a classic Negroni.
