Mezcal produced in Santiago Matatlán, Oaxaca
Maestro Mezcalero Gonzalo Martinez Sernas
Made from 100% Madrecuishe (Agave karwinskii) matured between 8–18 years
Cooked in conical earthen pit oven using pine and mesquite wood
Milled using traditional horse-drawn stone tahona
Fermented in Encino oak vats (tinas) using proprietary well water
Distilled twice using copper pot stills
Rested 9 months in glass
A rich, full nose of red fruit, dried herbs, orange peel, and damp stone precedes spectacular balance on the palate; soft cantaloupe melon early on with fresh thyme bolstered by lemon verbena, jasmine, and a delicate bitterness reminiscent of dandelion greens
