From the Distillery: El Manantial, meaning “the spring,” honors the water source in Tapanala used to ferment and proof this 43% abv espadín, crafted by the sons of maestro Don Joel Barriga. This essential spring has sustained the village for generations, from Zapotec times to Spanish arrival. Combined with high-elevation agaves from the Sierra Sur, the water imparts terroir and supports the bright, fruit-forward, almost tropical profile Don Joel’s mezcals are known for.
