From the Brand: High Proof is an intricate production that includes techniques borrowed from maestro mezcaleros. The three central features that push this spirit to such heights are the use of the tahona, featured prominently in the label’s center, the use of bagasse fibers (at the end of the pitchfork) to naturally spark fermentation, and the months of resting in glass demijohns at the end of production, seen in the upper left. If you look closely, you can even see the corn-cob caps on the demijohns, which naturally control micro-oxygenation and allow us to distill to proof without masking the most delicate aromas and flavors.
