REZPIRAL - Agave Distillate (uncertified Mezcal)

We’ve never seen this before, mezcal made just from the large sword-like leaves of a maguey! Normally these are chopped off and not used in the production of mezcal, but here Don Ramirez flipped the script, collecting pencas to do a small batch with just them. The bottle says “penca de Espadin” but that was a typo — they are actually leaves from the arroqueno agave (which makes more sense — arroqueno leaves are much “meatier”, and it’s hard to imagine there being enough sugar in the leaves of an espadin plant to pull this off!). We were a little skeptical at first that this would work, but after tasting it, we immediately jumped in to buy what was left of the batch (only 100 liters to start with, for obvious reasons). A really fun and unusual release.
