What is Sotol? Sotol is a distilled spirit traditionally made in Mexico. It’s derived from various plant varieties of the Dasyliriongenus, which are commonly referred to as sotol in Spanish and desert spoon in English. There are at least 22 known species of Dasylirion, though Dasylirion wheeleri is by far the most common used in sotol production. 

Perhaps the perfect spirit to enjoy on a warm day by a body of water, this Cedrosanum is complex and inviting with notes of green olive, smoked grass and cedar.
