What is Sotol? Sotol is a distilled spirit traditionally made in Mexico. It’s derived from various plant varieties of the Dasyliriongenus, which are commonly referred to as sotol in Spanish and desert spoon in English. There are at least 22 known species of Dasylirion, though Dasylirion wheeleri is by far the most common used in sotol production. 

Leiophyllum leans into what many might call the identifying characters of sotol - it's vegetal, earthy, and oily.
